Year 7 Results and Participants- St. Louis, Missouri
For the 7th year we decided to try St. Louis! This cities pizza is famous for its ultra-thin, cracker-like crust and its signature use of Provel cheese — a uniquely local blend of cheddar, Swiss, and provolone that melts into a creamy, tangy layer unlike any other. Unlike traditional round pizzas, St. Louis-style pies are typically cut into small, square “party” slices, making them perfect for sharing. The sauce tends to be slightly sweet and often seasoned with a hint of oregano, balancing beautifully with the crisp crust and gooey cheese. This distinct style, developed by neighborhood pizzerias like Imo’s, reflects St. Louis’s Midwestern charm and community-focused dining culture — bold, unconventional, and proudly local.
